Raw Pumpkin Pie

Crust:

2.5 cups Walnuts – any type of nut will work, you may also use coconut flakes, walnuts contain natural oils that hold the crust together well
1/4 Cup Walnuts for Powder (Optional) – so the crust doesn’t stick to the pie dish
1.5 Cups Dates – remove seeds and chop
1 Tablespoon Coconut Oil

Filling:

3 cups Dates – juicy medjool work best, remove seeds and chop
3 cups Fresh Pumpkin – purchase a pumpkin, remove seeds and outer orange skin, and chop softer meat
1 Ripe Persimmon – squishy, soft, ready to burst
Cinnamon / Pumpkin Pie Spices – ginger, nutmeg, cloves, cinnamon, etc

Local Organic Apples (Optional) – to top the pie with
Lemon (Optional)

Tools & Other Objects Needed:

Food Processor

Preparation:

(Optional)  You may wish to create some nut powder by chopping 1/4 cup walnuts in the processor until  very very fine, like flour.

Using a food processor, process the walnuts until very fine, then add dates and coconut oil, until evenly mixed and sticky consistency.  The crust should be sticky and solid.  You may need to mix this a few times -> opening the processor and distributing the crust ingredients evenly, then mixing again.

When the crust is good consistency you may (optional) add the nut powder to the bottom of the pie dish, evenly distribute this, then place the mixed date nut crust on top and press into pie dish shape.  The nut powder makes it so the crust doesn’t stick to the dish as much and holds it all together well.

Now time to chop up the pumpkin.  You can use a vegetable peeler to peel the outer orange skin, or use a knife to chop it away.  You want to use the fleshy inner meat of the pumpkin for the filling.  You can save the seeds to bake in the oven if you like, and use the stringy pumpkin parts in the filling.

Chop up about 3 cups of the pumpkin meat into squares for the food processor.  *Note You may find the crust needs moisture, in which case add some of the soft stringy pumpkin.

Remove date seeds and chop to make processing easier.

Take your ripe persimmon, remove the dried top part, cut in half to check for seeds, then and add this to the food processor along with the pumpkin.  Process this until smooth then add the chopped dates 1 cup at a time.  Continue to taste and add dates to desired sweetness.  Also add the cinnamon &/or spices to taste.  This can be another process of processing, opening, distributing ingredients evenly, then processing again.  It can go on like this to get a good smooth consistency.  If you are going for beauty and creating a work of art, its worth it!

Add the filling to the crust and spread evenly.

You may wish to chop up some fresh local apples for the top of the pie (optional).  Make a nice design and then squeeze a lemon or lime minimally on the apples to prevent browning.
